Cupuacu Recipes – Pie and Mousse

Cupuacu is one of the most known and used fruits from the Amazon region and in recent years has been gaining more and more tastes throughout the country also known as cocoa of the Andes.

This cupuacu recipe is a new take on a Brazilian classic. While you may use a pie crust, this dish is traditionally served with vanilla wafers on the top, much like banana pudding. This is a very rich dish, so feel free to substitute 2% or non-fat milk when indicated.

Ingredients:

1/2 cup of cupuaçu powder
8 oz of heavy whipping cream
8 oz of condensed milk
Pre-made pie crust of your choice.
4 oz of whole milk

Instructions:

This is a simple recipe. All you need to do is blend all the ingredients together with a hand held mixer or in a stand mixer. Once you get a creamy consistency, spoon the cupuacu mixture into the pie crust. You may add vanilla wafers to had more texture.

Be sure to chill the pie for at least an hour prior to serving. This desert goes well with coffee or any other type of tropical fruit.

If you want to avoid dairy, try using coconut milk instead. The slight under tones of the coconut milk complements cupuacu very nicely.

Also, cupuacu can be very tart at times. Feel free to add a sweetener, such as sugar, during the mixing process. Keep in mind, chilled deserts are not as sweet when served cold, so add just a little more than you normally would.
